Believe it or not, Indian food is ideal for tapas! Small shared plates of exquisitely flavoured morsels, varied textures and huge variety.

How about Stuffed Mirchi Bhajji—jalapeno stuffed with ricotta and spices and fried in chickpea batter, steamed momos, or Prawns Rava Masala—crispy fried prawn marinated in spices and coated with semolina?

Chef Shilpa will introduce you to the concept of Indian tapas and teach you how to make six vegetarian and non-vegetarian dishes. Sit down with your fellow classmates to enjoy the results.

Move over Spain; tapas has reached the sub-continent!

Tuesday 7 May, 6.30-9. $99 including dinner and wine.

We understand that evening and weekend classes don't suit everyone, so why not come and join us for a class during the day, during the week?

These classes are for those who want to spend more time, usually around 5 hours, focussing on a specific skill that generally involves more technique than what is required in our other classes.  The first of these classes will be making the ever impressive croquembouche.

What do you know about sourdough?  Nothing, a lot, a little? Well, Holly Davis has knowledge she has accrued over four decades and she is coming to Canberra to share it and it’s not just all about sourdough either!

Holly will be running two workshops, the first: ‘Just Add Flour and Water’ will focus on how to fit sourdough making into your daily life.  The second, ‘Winter Warming’ will follow an adage Holly adores: “Cook once, eat twice.”.

You will receive a handbook with notes, recipes and variations of dishes.

Who is Holly Davis?

You may be familar with Holly's recently published book 'Ferment: A guide to the ancient art of culturing food'; you may have seen her listed as a teacher at the wonderful Cornersmith cooking school in Sydney;  you may even have stumbled across her website foodbyhollydavis.com; or perhaps you go way back to the 80s and know her from her tiny eatery in Balmain which then went on to become Iku Wholefood Cafe on Glebe Point Road.  Maybe you've never even heard of her!  Well, either way you are in for a treat.  Holly has a vast knowledge of food, in particular ferments and wholefoods. Come along and be inspired and learn from a true Master.
