Monday Spring & Summer classes 2019

After a long winter the weather warms and we crave freshness and liveliness in our food. It's time to embrace the bounty of the spring and summer seasons in our cooking, and that's our quest in these Monday Masterclasses.  We're cooking colourful tapas, festive Mexican, summer Thai, spring Italian, Provincial French, fresh and healthy Vietnamese. 

And then there is Christmas! How about mastering a Xmas seafood paella Mo Vida-style, Christmas duck, Ottolenghi-inspired vegetarian Xmas, and our tasteful take on turducken with some elegant turducken rolls. Lots of inspiration for spring and summer cooking!

The classes are Mondays 6.30-9pm in the Foodish Cooking School at the Belconnen Fresh Food Markets.

Let's bring the tastes of Spain into our foodish repertoire. Jamon, manchego, tortilla, chorizo--the produce of Spain lays the foundation for endless combinations of rich tapas flavours.

In this class we will be playing around with this produce to make a selection of tapas perfect for summer entertaining. We'll taste test the results with a glass of sangria (or two!).

Seasonality is a priority in Italian cooking, and in this class we transform beautiful spring produce into iconic Italian fare--asparagus, pecorino and lemon risotto, fresh colourful egg linguine with a gorgeous basil pesto, and a simple salsa crudo.

Korean barbecue uses flavoursome marinades to tenderise the meat and hot, quick cooking to retain the moisture and flavour. Accompany these with traditional side dishes and the barbecued meats, or 'gogigui', take on new dimensions of intensity.

In this class you cook a variety of gogigui and make some classic sides. Learn how to barbecue Korean style, enjoy the flavour combinations, and discover why Korean barbecue has become so popular worldwide.

Who says duck is only for special occasions! Duck breast may be expensive, but whole duck has breasts and other cuts that make for delicious results, and whole ducks are not that expensive.

In this class we learn how to break down whole ducks and use the various cuts to make fabulous, classy and accessible meals. Learn to cook duck breast to perfection. Make a gorgeous ragout with your duck legs. Render your own duck fat for those Xmas potatoes. Put on a duck stock for that Xmas gravy. We'll even do a bit of confiting!

We reckon that after this class, duck will be on your Christmas menu!
